Chia Pudding — Two Ways
I’m not trying to win breakfast. I just want something I can make in 2 minutes, forget about, and wake up to something that actually sounds good.
This is the one thing I come back to over and over again.
Same base. Two ways:
one with yogurt + milk (creamier, more filling)
one with coconut milk (dairy-free, a little richer)
The Base Formula
You really don’t need a recipe, but here’s the general ratio:
2 tablespoons chia seeds
1/2 cup liquid
optional sweetener (maple syrup, honey, or nothing)
pinch of salt (makes it taste better, don’t skip)
Mix, let sit for 5 minutes, stir again (this helps with clumps), then refrigerate.
Best after a few hours, but overnight is ideal.
Version 1: Yogurt + Milk (Creamy + Higher Protein)
What I use:
8 tbsp chia seeds
1 cup cup yogurt (Greek)
1 cup Fairlife milk (for extra protein)
drizzle maple syrup or honey or agave
splash of vanilla
Why this one:
This one feels more like an actual meal. It’s thicker, creamier, and keeps you full longer. If you’re trying to get more protein in without thinking about it… this is the move. I spoon this into 4 little jars so it’s ready to eat throughout the week.
Topping ideas:
berries + granola (Here is my recipe.)
cherries + shredded coconut
banana + cinnamon
peanut butter + chocolate chips
I also sometimes layer my favorite jam or frozen berries. Try the Trader Joe’s guava jam…it’s so good!
Version 2: Coconut Milk (Dairy-Free + Simple)
What I use:
4 tbsp chia seeds
1 cup coconut milk
maple syrup or agave
vanilla
Why this one:
This is the easiest version. It’s a little lighter but still feels good.
I make this when I want something quick, dairy-free, or just don’t feel like mixing multiple things.
Topping ideas:
mango + coconut flakes
strawberries + granola
blueberries + almond butter
chopped dates + cinnamon
A Few Things That Make It Better
Stir twice in the beginning (this is the difference between good and weird texture)
Add more liquid in the morning if it’s too thick
